Coconut Curried Fish

Think, for a moment, my dear friends, of the coconut, I mean, he’s done so much for us, hasn’t it? in fact he’s done so much I need a little walk around the island to think about the coconuts

QS: Fresh Mango Juice

Ingredients:

  • Green coconut
  • Fillet of fish (anyone you like) – floyd uses red snaper
  • fresh ginger
  • Shallots
  • Lime juice
  • Chillies
  • Fresh turmeric
  • Salt and pepper
  • Fish paste
  • Turmeric powder
  • Sugar
  • Coconut Milk
  • 3-4 freshly squeezed lemon juice

Beef Rendang

Probably the most famouse dish in malaysia – Beef Rendang.

Ingredients:

  • Beef tenderloin cuts
  • Mixture of chillies, garlic and onions crushed
  • Ground turmeric
  • Tamarind extract/paste
  • 4-5 Lime/lemon leaves
  • Lemon juice
  • Double creamy, thick coconut cream

Impala and Dried Fruit Curry

One of the most philippic and also, sadly, one of the most attractive antelopes in this area is the impala. And this is a big chunk, this is a big shoulder of impala, so I thought i’ll made a rather spicy fun curry

Ingredients:

  • Impala chopped into pieces
  • Chopped onions
  • Yellow curry powder
  • Chopped garlic
  • Sliced chillies
  • Dried fruits
  • Fresh chopped coconut
  • Coconut milk
  • Chopped coriander

Steamed Fish Curry

Iv’e been aching to get some steam fish and i’m going to make a steamed curry today, something I never done in these programs before.

QS: Glass of rain water

Ingredients:

  • Fillet of fish cut into diagonals pieces (floyd uses bass)
  • Red curry paste (chellot, garlic, galangal chillies, lemongrass, selenbat and fish paste)
  • Duck egg
  • Coconut milk
  • Fish sauce
  • Galangal leaves
  • Basil
  • Mint
  • Kaffir leaves
  • Red chillies
  • Fresh coriander

Chicken Curry

On a gentle river cruse there is nothing like slow cooking, rich, hearty chicken and sweet potato curry

Ingredients:

  • Filet of leg of chicken
  • Sweet potatoes, quickly deep fried in oil
  • Coconut milk
  • Finely chopped oinions
  • Garlic
  • Yellow curry powder
  • Ground turmeric
  • Crushed dried chillies
  • Fresh chilies
  • Very finely chopped lemongrass
  • Couple of bruised stocks of lemongrass
