Liver Dumplings

  • Semolina flour
  • Finely fried chopped shallots
  • Nutmeg
  • Finely chopped parsley

Its glissening yellow, it’s golden, its mastered, its says dijon it says Burgundy!

QS: A glass of bojole wine

Ingredients:

  • Veal escallop
  • Dijon mustard (prefer the pale yellow one)
  • Unsalted butter
  • Wonderful thick double cream
  • Marc de Bourgogne liqueur (like brandy)

Vegetables Soup

I’m going to cooke you a 3 course meal, using typical perigord ingredients , from the humblest to the most expensive available

Ingredients:

  • Fresh green beans (or if dried, soaked in water for a night)
  • Potatoes
  • Tomatoes
  • Rosemary
  • Speck (Fat bacon)
  • Carrots (floyd uses baby carrots)
  • Garlic
  • Parsley
  • Thyme
  • Bay leaves
  • Ashee (finly chopped pearsly, garlic and fat bacon)

Simmer together all vegetables for an hour and half in water and little salt. Add the Ashee and simmer for another half an hour.

Goats Cheese Salad

I’m going to cooke you a 3 course meal, using typical perigord ingredients , from the humblest to the most expensive available

Ingredients:

  • Walnuts
  • Walnuts oil
  • Red wine vinegar
  • Lettuce
  • Endive
  • Sliced goat cheese
Grill the cheese in the oven until gold and brown and serve with the walnuts oil, walnuts and the green leaves.

Perigord Sweetbreads

  • Sweetbreads
  • Sliced truffles
  • Fresh goose liver (Foie Gras)
  • Butter
  • Chicken stock
  • Red wine

Piperade

I don’t entirely agree… to start with… all that’s not very… hum

QS: Red wine in lowball (!)

Ingredients:

  • Bitten eggs
  • Fresh thyme
  • Garlic (Chopped rough or sliced)
  • Sliced onions fried in Lard (pig’s fat)
  • Fresh parsley
  • Fresh tomatoes chopped and skinned
  • Red and green peppers
  • Salt and pepper
