Its a brilliant day for massing about here on the river, in my little punt on this fantastic floating market just outside of Bangkok, and to celebrate the superb location i’m going to make a very simple and very typical thai soup – Tom yam
Ingredients:
- Wonderful big prawns
- Mushrooms
- Lemongrass
- Galangal (thai ginger)
- Lime leaves
- Fresh delicious pieces of coconut
- Little dynamite birdseye chili peppers
- Fresh coriander
- Hot chicken stock
- Sauce (chili paste, fresh lime juice and fish sauce)

- Steam boat (a pot will be just as fine)
- Beef stock spiced with some chillies
- Okra cut into thin slices
- Taro leaves finely sliced
- Chinese black mushrooms
- Beef fillet in thin slices
- Pineapple cut into cubes
- Cumin plant leaves

I’m going to cooke you a 3 course meal, using typical perigord ingredients , from the humblest to the most expensive available
Ingredients:
- Fresh green beans (or if dried, soaked in water for a night)
- Potatoes
- Tomatoes
- Rosemary
- Speck (Fat bacon)
- Carrots (floyd uses baby carrots)
- Garlic
- Parsley
- Thyme
- Bay leaves
- Ashee (finly chopped pearsly, garlic and fat bacon)
Simmer together all vegetables for an hour and half in water and little salt. Add the Ashee and simmer for another half an hour.
